Hand-prepared, tender whole leg of lamb.The hind leg of a Lamb, with all the bones removed, except the knuckle bone which is french trimmed. This gives more even slices of meat and is a much easier joint to pull/carve, whilst retaining the distinctive flavour of being cooked on the bone.
